Staff were observed using a cloth to dry dishes, food containers, and lids. PHI intervened and advised the operator that cloths should not be used after the sanitation step. All dishes and food contact containers must be allowed to air‑dry to maintain proper sanitary practices.

A significant gap was noted beneath the back exterior door, creating a potential entry point for pests.
