1) Quat sanitizer was found in a sanitizer pail and a shallow container near the espresso machine at 50 or 100ppm. The sanitizer solution was changed during the inspection and was at a concentration of 200ppm as required. Ensure Quat sanitizer is at a concentration of 200ppm for adequate elimination of microbes.
1) A carton of coconut milk was found on a food surface near the drive thru window. The temperature was 11 degrees Celsius. The carton was put into a cooler unit. Ensure that perishable items like coconut milk that are routinely used at the drive thru window are kept at room temperature for only 2 hours or stored at or below 4 degrees Celsius to prevent the growth of microbes.
