Cooked rice was found to be cooling improperly- it was found inside the rice cooker with the lid on, with the rice cooker turned-off, measured at 50C., Rice is to be cooled in shallow pans/trays with the lid off to help heat escape quickly. Rice is to be cooled from 60C to 20C or less within two hours and then from 20C to 4C or less within 4 hours. Use your probe thermometer to ensure these temperatures are achieved.

A few small flies were noted crawling on the floor near the grease trap underneath the 2 compartment sink. Remove any debris and unused items, and recommend wiping surfaces in this area down with sanitizing solution frequently to help deter insects. , The operator did not know if a pest control program was in place. A pest control program must be in place, and records documenting this program must be kept and produced upon request.
Some bags containing refuse/garbage were sitting on the floor in the kitchen; some empty bags and boxes, as well as some unused items were found throughout the facility, making it difficult for inspection. Ensure that all bags of refuse/waste, as well as all unused items are removed from the facility to make it easier for cleaning and inspection.
