The dough mixer had a black garbage bag covering the dough.
Deceased cockroaches were present on sticky traps under the stainless steel table and on the floor by the hot water tank and by the dishwashing area. The other sticky traps contained no cockroaches. However, it was unobserved on food contact surfaces during inspection. No live cockroaches were observed. Operator indicated there has been ongoing assistance from pest control company.
The outside section of the walk in cooler door had flaking paint, The mechanical ventilation canopy filters had buildup of grease, Cardboard was used to line a shelf on the cookline equipment, Panini press had buildup of grease , Shelves and rolling pins had some buildup of food, In the walk in cooler, there was cardboard used to line shelves., Two wooden cutting boards were in poor condition and were discarded during the inspection., Some equipment/bowls/pot on counters/shelves had remnants of oil/food. Ensure all equipment/appliances are cleaned and sanitized after use. , Plastic bins holding dry ingredients on the shelves had buildup of fried food. Scoops were also stored inside the bin. Ensure handles are not touching the food.
