Please ensure the dishwasher is functioning properly and maintained as required. Ensure the dishwasher measures 82C at the final rinse manifold and 71 at dish level to achieve satisfactory sanitation.
Three chocolate containers in the pastry room, not in active use, were found uncovered. Please ensure all food items are properly covered at all times. Corrected onsite. The operator covered the containers.
