A sanitizer solution must be available at all times during food handling to ensure effective surface sanitizing., , One used wiping cloth was observed on the prep cooler and was relocated to the designated bin. Wiping cloths should be stored in a sanitizer solution between uses, and dirty cloths awaiting cleaning should be kept in a designated storage bin for soiled linens.
The handwash sink faucet in the front service area is broken and was not producing water. Staff reported washing their hands in the two-compartment sink in the back of house. The faucet must be repaired immediately to ensure staff have access to proper handwashing facilities at all times.

Walk in cooler - observed a large container of thawed out ground ham/pork stored on top of a container full of slice pepperoni., , Please ensure any raw meats are being stored below and away/separated from any ready to eat food items.
- Observed a large paper bag of oregano directly on the kitchen floor., - Walk in cooler -> observed 3 - 4 pails of cooked pasta not covered.
Observed 2 large strainers full of cooked/hot ground beef cooling down in kitchen., , Please split volume in half for quicker and even cooling.
Prep cooler at the front - middle door latch don't appear to close properly. Please fix.
Additional cleaning for all the air fryers - observed accumulation of grease and food debris.
