Above the hot-holding unit, sliced tomatoes and salad observed in a container were measured at 14 degrees Celsius. The operator informed that the indicated food was out for more than two hours and discarded the food during the inspection. Informed operator not to store food requiring refrigeration above the hot warming units and instead store the potentially hazardous food in the electrical cooler.
