Observed food boxes and food tray on the floor underneath the shelves in the walk-in freezer during the inspection. Supervisor mentioned that the delivery was done on Monday and staff onsite have not been able to arrange the boxes due to shortage of staff. Staff removed food packages from the freezer floor and placed them on the shelves - CDI., , Ensure food boxes and trays are stored 15 cm off the floor to protected them from any forms of contamination at all times., , All foods and ready-to-eat foods prepared and stored in walk-in coolers were covered with plastic wrap.
The plastic material attached to the dishwasher to prevent splashing was not in good repair. Facility supervisor submitted requisition for repair to the maintenance department during the inspection., , Ensure the plastic is replaced with material that is cleanable
The surface of the hand washing sink at the cafeteria appeared dirty at the time of inspection. Sink surface and the attached faucet cleaned during the inspection. In general, the facility appears to be clean and well maintained.

Observed bags of frozen cauliflower soup being thaw in one of the sinks at the back of the kitchen. The water was probed, and temperature of the water was measured to be at 37C. This implies that soups are being improperly thawed and may promote growth of bacteria and possible foodborne illness. Staff stated that the soup bags would be return back to the cooler. Staff drained water and returned soup bags to the cooler., All coolers and freezer temperature were adequate for safe food storage at the time of inspection., , Guidance was provided to staff regarding proper thawing process, hot holding, refrigeration temperatures, and cooling for safe food handling practices., ,
