The facility has a two-compartment sink which is not appropriate for washing rinsing and sanitizing the baking trays., - Either get a bigger sink plumbed in or have smaller baking trays that are the right size to the sink.
1) Food was stored on floor in the walk-in in freezer. , - Store food 6 inches above the ground., , 2) Mop and mop bucket was stored near the bread rack. , - Store the mop and mop bucket away from food.
A few beetles were observed on the glue traps. , - Keep areas clean and have regular pest control operator checks.
The display cooler shelf had tape to keep the shelf together. , - Remove the tape and repair the shelf in a way that the shelf is smooth, easily cleanable and non-absorbent to moisture.
The vents throughout the facility had dust accumulated., - Clean the vents.
