The owner was not sanitizing equipment, and the sanitizer solution was not prepared to sanitize the dishes., The owner washed the 2-compartment sink and made a sanitizer solution at 100 ppm., The dishes and utensils were washed, rinsed, sanitized and air-dried.
1) Serving tongs were stored in stagnant water with a surface temperature of 22.6°C., 2) Rice scoop was stored in stagnant water at 21.6°C., The serving utensils were promptly washed and stored in sanitizer solution at 100ppm.
