RéussiTwo spray bottles of sanitizer in the west bar were unlabeled. Ensure that all chemicals are clearly labeled to identify contents.
An insert of pork belly in a prep cooler was mounded above the insert fill line (8.3C external temperature). Ensure that all perishable foods are stored at 4C or less. Corrected during the inspection.
There was no paper towel dispenser at the hand wash station in the east or west bars. A roll of paper towel, not in a dispenser, was used to dry hands. Ensure that all hand wash stations are equipped with soap and paper towels that are protected in a dispenser. Install paper towel dispensers in the bars.
The ceiling around the speaker in the kitchen is constructed of unfinished drywall which is not smooth, cleanable and impervious to moisture. Ensure that the ceiling is constructed of material that is smooth, cleanable and impervious to moisture.
Personal items including shoes and jackets were stored next to clean food handling equipment. Ensure that personal items are stored separate from food and food handling equipment.
An accumulation of grease, grime and or food debris was noted in the kitchen, including but not limited to: ceilings (dust), floors and walls behind/below equipment on the cooking line, inserts in the ventilation canopy, top of dishwasher, floor below the 3 compartment sink, below the equipment storage shelves (beside the stairs), floors and walls of walk-in cooler, floor and walls in the basement cooking area (grease) and floor in the bar. Thoroughly clean the kitchen.
