Entire kitchen and hookah areas require a thorough cleaning, included but not limited to: floors, walls, ceilings, ductwork, fixtures such as canopy controls, paper towel dispensers, etc., shelving, and all high flat surfaces (these will collect dust & debris). , , Cooler/freezer doors and handles have a buildup of food debris. Ensure that all high-touch surfaces are kept clean and sanitary., , Cooler next to deep fryer is very greasy on all surfaces. Additionally, this cooler has no handle.
- The chlorine concentration was undetectable, and the temperature of the dishwasher was found to be unsatisfactory to sanitize the dishes., *Repair the dishwasher and ensure the chlorine concentration was measured as 100 ppm at the dish level and/or temperature is measuring at least 71 C at the dish plate level., *Ensure to use single use utensils until the dishwasher is repaired and to sanitize all the other dishes manually with the sanitizer (100 ppm of Chlorine if using Bleach).

Reduced lighting levels were noted in the kitchen. Operator is to replace/adjust lighting in the kitchen as discussed for clear visibility in all areas of the kitchen., **OUTSTANDING (2024-11-27). One light fixture was not working; the area underneath was not well lit. Ensure to fix the light fixture so that all areas of the kitchen remain WELL-LIT.
Multiple floor tiles by the main entrance to the kitchen area were broken, exposing the raw , cement underneath. Ensure that all surfaces in the kitchen, including floors, must be smooth, impervious and easily cleanable to prevent dirt and dust accumulation. Replace/repair the floor tiles.
Food residue and grime was noted in hard to reach areas of the kitchen, including under appliances and behind the cook line. Operator is to clean these areas and to include a deep cleaning schedule in their routine operations., **OUTSTANDING (2024-11-27) - There was still a thick accumulation of grease beside the kitchen equipment. Ensure to clean the area and maintain it. Also, implement a cleaning schedule that routinely cleans all equipment and surfaces in the kitchen.
- Observed wet cleaning cloths on the counter and was not being stored in sanitizer., *The violation was corrected onsite. Staff soaked the cleaning cloth in the sanitizer solution., **Please make sure cleaning cloths are kept in the 100ppm bleach sanitizer while not in use to prevent the growth and spread of bacteria. Sanitizer should be changed every 2 hours or when its visibly dirty.
- The chlorine spray sanitizer concentration was measured as 50 ppm using chlorine test strips., *Staff prepared the fresh solution, and concentration was measured as 100 ppm., **Ensure to maintain the chlorine sanitizer at 100ppm of chlorine for effective sanitization of surfaces and dishes.
