There was no probe thermometer available on site for checking the safe internal temperature of food during hot-holding. A thermometer was obtained during the inspection. Please ensure that a probe thermometer is readily available on site and used to confirm that all high-risk food items in the hot-holding are maintained at a temperature of 60°C or above.
