Large container of hot sauce/soup was being cooled in a deep container at room temperature. Deep containers do not allow heat to escape efficiently, causing the food to cool too slowly which can cause bacterial growth on the cool part of the soup., , **Soup was transferred to shallow pans for fast cooling during the inspection.

All food products must be stored a minimum of 6 inches (15 cm) off the floor on approved shelving, racks, or pallets to prevent contamination, facilitate proper cleaning, and protect food from potential exposure., , **Food items were removed off the floor during the inspection, , 2. Plastic cup without a handle was found being used as scoops and stored inside the bulk food containers in the dry storage area. Replace the plastic cup with a scoop that has a handle and stored with the handle upright to avoid contamination of food., , **The plastic cup was removed from the bulk product during the inspection. Please obtain scoops with handles.
Chlorine test strips cooled not be validated without an expiry date. Please obtain new test strips that can be validated.
