- Dirty cleaning cloth was observed on the counter in the commissary and main kitchen., *Staff removed the cloths and disinfected the area during the inspection., **Maintain the sanitizer concentration at as per the chemical used and replace the solution when it becomes visibly dirty or every two hours.
- There were no test strips in the commissary kitchen and test strips in the man kitchen were expired for Sink & Surface sanitizer., *Obtain test strips and check the concentration every day and maintain the log.
- The main kitchen dishwasher was observed leaking at the time of inspection. Staff advised that repairs have been requested and are pending., *Repair the dishwasher. Until repairs are completed, ensure the affected area is kept clean and dry. Place a suitable container beneath the leak to collect water and prevent water accumulation on the floor, reducing the risk of slip hazards and maintaining sanitary conditions.
