The portable coolers containing mixed juices were measured at 11-14°C.

Jamaican patties in the chafing dish were measured at 40°C. The operator also confirmed that the patties were not being reheated to 74°C prior to holding in the chafing dish and prior to serving. The patties were discarded during the inspection. The inspector informed the operator to ensure that foods are reheated to 74°C, then maintained at or above 60°C in a hot-holding unit throughout the event.
